Coppa’s a cold cut that goes by many names. Capocollo is its given Italian name, but you might also know it by one of its aliases: Capicola, Capicollo, and gabagool if you’re Neapolitan, or you just happen to be a big fan of The Sopranos. Call it what you will, it’s a simple cured meat, named simply for the cut of meat it comes from (coppa = neck). La Quercia works its homegrown, dry-cured magic on this new Italian American classic by starting with only the best humanely-raised heritage breed pigs that come from neighboring family farms in Iowa and Missouri. La Quercia prides itself on adhering to strict guidelines when it comes to how the pigs are raised, which makes for happier, healthier lives all around. Their Coppa Americana is rich and meaty, with subtle hints of smokiness and spice and a light dusting of cocoa. Honestly, it tastes good with just about any wine you’re serving, and it’s an ideal accomplice on panini and cold sandwiches alike. On a cheese plate, we like it spread out next to a hunk of Parmesan, creamy Robiola Bosina, and Mountain Gorgonzola, and a dish of Cerignola olives to round it all out. How did a family in Norwalk, Iowa come to produce some of the best cured meats in the world? It started with tradition: After three and a half years in Parma, Italy, Herb and Kathy Eckhouse brought classic techniques back home to create their signature salumi, something they say “expresses our appreciation for the beauty and bounty of Iowa”.
