“Salva” means saved, as this creamy and crumbly selection was originally made to save excess milk from spoiling. The square of velvety white paste has an earthy, stone-like rind that infuses the milky cheese with an earthy, herbaceous, and slightly mineral-like essence. Pair Salva Cremasco with rich Italian meats like Olympia Provisions Capicola or Tanara Culatta.

  • Salva Cremasco has a distinctive appearance. It is cube-shaped and marked with its initials "S.C." on the rind. The cheese has D.O.P. name protection, so each wheel has to be made according to strict standards.
  • Salva Cremasco was originally produced to preserve excess milk in the spring or summer.
  • Cremasco refers to the town of Crema in the Lombardian province of Cremona, Italy, where this cheese was traditionally made.
  • The cows used to produce the milk for Salva Cremasco must be of the Italian Friesian or Brown Swiss variety. These types of cattle are traditionally used for cheesemaking due to their high quality and quantity of milk.
When you receive your cheese, unpack the order and refrigerate the items. We recommend using the cheese paper we send most of our products in to store the cheese. The cheese paper helps cover the items and stop them from drying out, while also allowing the cheese to breathe. Since cheese is mold, it's a living thing! If you cut off air circulation to the cheese, you can actually cause it to suffocate and spoil at a faster rate.
