  • This 18-Month Emmentaler is Slow Food Certified, which means its production adheres to specific practices that protect the artisanal nature of the cheese—such as the use of raw milk from local animal breeds as opposed to using more industrialized production methods.
  • The same bacteria that’s used in the maturation process for Gruyere is used in Emmentaler. Though milder in flavor, Emmentaler melts just as well as Gruyere.
  • Emmentaler was named after the region in which it originated, the Emme River Valley or Emmental.
