  • Though it may not technically be a Gouda—traditional Goudas from Holland must be made with cow’s milk— Young Goat Gouda is made using the same production methods as the Dutch cheese. The semi-firm wheel is mild and sweet, without the chalky texture of the typical goat cheese.
  • The cheese ages for approximately four months — just enough time for the paste to develop its supple, elastic texture.
  • Like the typical goat cheese, Young Goat Gouda has a bright, white color.
  • The beta-carotene naturally occurring in grass and responsible for the golden hue in cheeses made from other types of milk—specifically, cow’s milk—is absorbed by the goat, resulting in the cheese’s white color.
When you receive your cheese, unpack the order and refrigerate the items. We recommend using the cheese paper we send most of our products in to store the cheese. The cheese paper helps cover the items and stop them from drying out, while also allowing the cheese to breathe. Since cheese is mold, it's a living thing! If you cut off air circulation to the cheese, you can actually cause it to suffocate and spoil at a faster rate.
