The Greeks have contributed so much to modern civilization as we know it: democracy, Oedipal complexes, lyric poetry, John Stamos….the list goes on. Among these gifts, we at Murray’s are particularly fond of the mighty yet humble feta. You know what it is, but have you really tasted it? Our mission is to bring you the golden ideal in all things cheese, so we recently took a trip to Greece with the specific purpose of finding a feta that would please the gods, and you. Our travels took us to a hillside farm just outside of Larissa, in Thessaly, where we tasted a feta so milky and pure, we had to bring it back with us. Made with 90% sheep milk, 10% goat, this is exactly it should be: salty, rich, and tangy, with a subtle, peppery finish. Feta’s a fresh cheese, meaning it doesn’t undergo much of an aging process. Once the whey has been drained, the salted curds are molded and placed into wooden barrels where the blocks of cheese marinate in brine, which is how it’s transported from Greece to us. When removed from the brine, the blocks glow bright white like the Acropolis under an August sun. And, like Greece itself, feta’s a resilient cheese that lasts for ages as long as it’s cold-stored in brine. One of the most versatile cheeses around, you can use it in a wide range of dishes such as salads, omelets, casseroles, pastas, and sandwiches. For an authentic experience, simply drizzle with olive oil, sprinkle some thyme, and crumble directly off the block onto your fork while sipping a glass of chilled Retsina.

This is the way Greek Feta is supposed to taste - with sheep 's milk (greeks don't make Feta with cows milk) and swimming in a perfect brine. Reminds me of the kind of Feta I ate when I visited my YiaYia on Sundays...
