Made from 100% pure East Friesian sheep's milk, we mature this cheese to tangy, mushroomy perfection in the caves below our shop. Local cheese calls for local accompaniments, so pair this luscious bloomy-rind with a Long Island Cabernet Franc and New York City's finest Z Crackers.
