Maple Leaf Smoked Gouda is a true Wisconsin original. Cold-smoked over hickory wood chips to give it a meaty flavor with plenty of tangy sweetness, it comes from a century-old dairy farm cooperative where Master Cheesemakers use high-quality milk from local farmers to create delicious, hand-crafted cheeses. Try this Gouda melted over a burger or as a snack paired with Murray's Roasted & Salted Pistachios.

“Much like the Red Wax Gouda, this smoked gouda can be used in a variety of ways. The smoky flavor is incredibly satisfying. I love melting it over my burgers or using it to make a decadent grilled cheese with some Divina Fig Spread. Apply a layer of fig spread to each slice of bread and then add slices of Maple Leaf Smoked Gouda. Cook over medium heat for three to four minutes, and feel free to add butter to either side of the bread as you grill it.”

  • Since 1982, members of the Maple Leaf Cheese Cooperation have been cold-smoking their Gouda over hickory chips.
  • This cheese is made using pasteurized milk from local farms.
  • A key step in the Gouda-making process is a technique called “washing the curd,” where the cheesemaker flushes the curds with fresh water, clearing away residual lactic acid from the fermentation process and resulting in a sweeter cheese. The cheese is then smoked using the “cold-smoking” method, adding flavor without impacting the texture of the cheese.
  • Cold-smoking means that the cheese never gets heated above 90 degrees Fahrenheit—any higher and the cheese would start to melt, affecting its texture. The cheese rests above carefully controlled smoking hickory chips. Hickory is often used for smoking because of the bold flavors it can impart.

When you receive your cheese, unpack the order and refrigerate the items. We recommend using the cheese paper we send most of our products in to store the cheese. The cheese paper helps cover the items and stop them from drying out, while also allowing the cheese to breathe. Since cheese is mold, it's a living thing! If you cut off air circulation to the cheese, you can actually cause it to suffocate and spoil at a faster rate.
