Our job is to seek out the best of all cheeses on this dairy-producing Earth. Once upon a time that meant the fanciest cheeses from tiny hamlets of Europe. We still love those, don't get us wrong. Like the Burgundian monastery cheese Abbaye de Citeaux (which, by the way, the government has banned from import, so get one of our last 40 pieces before they're all gone!) Those cheeses are sexy, but we're starting to fall for the everyday gems as well.

Rob, Liz and Sarah have taken several Wisconsin trips of late, looking for the best producers of the table cheeses we all love to nosh on, or, if we're lucky enough to have a grill these days, to MELT. Two producers of particular note from their travels:

EDELWEISSEDELWEISS:
This sister producer to Maple Leaf is comparable in size to our buddies at Grafton Village Cheese Company, but think Swiss, not Cheddar. An imported Swiss copper kettle, raw milk, 140-pound wheels, and 17-24 months of slow, warm aging means creamy, not gummy, texture and a mellow sweetness rather than Swiss-y punch.

MAPLE LEAF FARMMAPLE LEAF FARM:
Cheesemaker Jeff Wideman has been running the vats at this 96-year old cooperative for more than 40 years. He told us, "You don't keep your job for forty years if you don't know how to make cheese." That means knowing the seasonal variation in milk of the Co-op's 16 family farms, a particular challenge as we move onto the grasses of Spring. It also means making your own pepper mix so the texture is crunchy and the flavor is fierce. Helllllllooooooooooooo hamburger. We're coming.

Ever wonder how Murray’s caves became so cool?  We had a little help from our (French) friends at Maison Mons.  So now that you’ve checked out our cheese caves, come learn about our inspiration.  Laure Dubouloz, Maison Mons US Export Manager and third generation affineur, is giving us the low down on all things affinage: How do they find their cheese?  What are their cheese caves like?  And (most importantly) what makes Mons cheeses so good?  Wine included.

The weather’s getting warmer and there’s no better to way to cool off than chilling with the cheeses (literally).  Check out our cheese caves during our half hour long cave tours.  Cheaper than the movies and more fun than the museum, the tours are the perfect Saturday outing for kids and adults alike.  Small tasting included.

The Mothers of Cheesemaking

Now that you’ve paid tribute to your own mother it’s time to worship the mothers of cheesemaking.  Come join us over a full cheese plate as we plot the path of women’s involvement in cheese.  From the humble beginnings of Camembert to the farmhouse fromage of Mrs. Quicke, enjoy a tasting and discussion sure to intrigue.  Wine included.
