It's a face-off. These two heavy-weight champs have a lot in common. They're strong, they're blue, made from mixed milk, Spanish. But that's where the similarities end.
The differences are intense. And we mean INTENSE.
Cabrales, in the first corner, packs a mean punch. It's the contender with the knotty muscle to bash you in the buds. Valdeón is the elegant fighter. It will knock you out with its butter-smooth moves.

True Cabrales is still a farmhouse cheese, with seasonal variation and fleeting availability. The milk of cows (and sometimes goats and sheep, depending on availability) grazing on high-altitude pastures in Asturias is formed into wheels and aged one month, followed by at least two additional months in natural limestone caves. Originally wrapped in sycamore leaves, Cabrales is now found covered in foil, with a logo stamped into it to prove its origin. The interior mold may develop spontaneously with exposure to air; because the cheese is not inoculated with blue mold spores, don't expect a neat web of blue veining. Mature Cabrales has the peculiar gray-green color of Yoda's skin, with a sandy, crumbling texture. It is a deliciously strong, fierce, eye-watering, throat-searing mouth-numbing experience. All in a good way. |
Valdeón:
In a case of mistaken identity, this mixed-milk cheese is often confused with Cabrales, a far more assertive cheese, though it lacks the signature sycamore leaf wrapping. This Valdeon is aged 3 months and has a moist, marbled, blue-veined interior and relatively mellow sweetness. Its leathery, earthy undertones are delicious, but markedly softer and gentler than the spicy ferocity of Cabrales.

Manuel Maia got a taste for the U.S. during a high school exchange trip to Chicago. In 1998 he founded an export company to introduce small production Portuguese cheeses to the rest of the world. Lucky us!
Many of these cheeses remain obscure and dramatic. Many are made from ewe's milk and coagulated with thistle rennet, for a trademark vegetal, asparagus-y, sour bite. The textures are thick and nearly whipped. We love them.
