First we'll set you straight on coagulation as we tell you how milk turns from fluid to firm curds. Then we'll all roll up our sleeves to turn curds into the beautiful balls that we know as fresh mozzarella. Taste several samples of fresh pasta filata (pulled curd) style cheeses (think Mozzarella, Bufala, Burrata, oh my!), enjoy a glass of wine, and bring home your own mozzarella masterpiece. Fresh cheese has been eaten for thousands of years, in every corner of civilization. The magic of turning liquid milk into a luscious, creamy cheese is revealed as we take you through the process and give you the opportunity to see the versatility of fresh cheese- be it through adding herbs, smoking it, adding honey or using it as a ravioli filling or crostini topper. After starting the process of making cheese, we taste several different fresh cheeses, learning about the history and culture of curd. By the time class is over, students will have the opportunity to customize their cheeses, participating in a class tasting of their own creations! Find Out More
