This pasteurized-for-export version of the classic, raw milk Brie de Meaux is sold under the revised moniker ‘Fromage’ de Meaux. Produced by Rouzaire of Tournan-en-Brie, Meaux is thermalized; it’s pasteurized for a longer time at a lower temperature. This is a gentler process that helps the milk retain its integrity for ripening, resulting in a pretty close second to the original –head and tails above the industrial, pasteurized, grocery store stuff. The gooey interior tastes as it if laced with butter-softened black truffles and a subtle spiciness. Though rind is white – go for a bottle of red.
