Francois Pralus, one of three French "Maîtres chocolatiers," makes his own chocolates in Roanne, France, using directly imported cocoa beans from the best global producers. Each variety comes from a different corner of the world, and offers distinct nuances. These "Tablettes" are not only superb snacking bars, but are also formulated for confectionary and baking use. Equateur 75% explodes on the palate with bold flavors of dried citrus fruits and figs, and finishes on the bitter-acidic side. This is what they mean by "bittersweet."
