Sweet corn is a summertime must. We’re smitten with Rick’s spin on this delicious staple—sweet n’ zesty, it can’t help but get fresh with you. Whip up some nachos, or serve use in soups, marinades, and be sure to give our melted sandwich a try:
The Handy Young Man Melt
- 3 T grated Manchego
- 3 T grated cheddar of your choice
- Handy Corn Salsa – to taste
- 1 tsp Mayonaise (optional)
- 2 slices whole grain bread
Spread the bread slices with mayo on one side (or use some room –temp butter, and why stop on just one side?) and then generously sprinkle your grated cheeses onto one of the slices. In the meantime, warm up your skillet/ frying pan/ Panini maker, and then spoon on some corn salsa. Place the other slice of bread on top of your cheese and salsa and place on your griller of choice. If you’re using a skillet or a frying pan, you can put a plate over the sandwich to press it down and get a more even melt and toasting. Flip over, repeat. Each side won’t take more than a minute if you’re griller is heated up first. And prest-o sandwich-o, you’ve got one handy young man by your side!
