Made with fresh pasteurized goats' milk from family farms in Vermont, Bijou curd coagulates overnight, drains in cheese cloth and is then shaped into little buttons. Dried, and ripened for one week, Bijou evolves with time, gaining sharpness and complexity after thirty days.
