If sophistication had a flavor, it would be this original Cavemaster creation. A blend of old world traditions and modern cheesemaking, Normandy Hill begins as a green (unaged) cow’s milk button from the Cellars at Jasper Hill—the same base we use for our Cavemaster Reserve Lait Bloomer—and embarks on a journey through our Caves where it’s washed with a mixture of water and Calvados for a few weeks. Calvados, an exquisite apple brandy from Normandy, gives the rind a soft orange coloring and infuses the cheese with mild, subtle savor and just a hint of smoke. The result? A complex profile that’s reminiscent of cooked pears and a flaky shepherd’s pie—perfect with a tumbler of brandy or port.
