If “farmhouse”, “goat”, and “blue” are words that get your mouth watering, then we have a cheese for you. Outside of the town of Cádiz in the Andalusian mountains of Spain, Ana Isabel Rosado makes this farmhouse blue cheese from the milk of her family’s goats. These are not just any goats, but rare Payoyo goats. For more than 50 years Ana Isabel Rosado and her extended family have worked to keep the Payoyo from disappearing, growing the herd from just a handful to over 500 today.
