Apple Brie Salad by Her Wholesome Kitchen​ ​


For seasonal salad inspiration, we turned to Megan, the creator and recipe developer for Her Wholesome Kitchen. Starting with Murray's Mini Brie, she came up with a fresh and fruity masterpiece. "This apple brie salad is full of perfect fall pairings: sweet apples match with creamy brie and chewy cranberries complement crunchy pecans," she explained. While her simple honey mustard dressing is a crowd-pleaser, she also says that you're free to swap in your favorite store-bought honey mustard or other options like balsamic or apple cider vinaigrette. preparation & ingredients

​5-6 cups mixed greens

1 Honeycrisp apple, sliced

⅓ cup dried cranberries

⅓ cup chopped pecans

6 oz. Murray’s Mini Brie, cubed​

½ cup Murray’s Italian Extra Virgin Olive Oil​

2 Tbsp. apple cider vinegar

2 Tbsp. Fallot Smooth Dijon Mustard

3 Tbsp. Mieli Thun Millefiori Wildflower Honey​

Salt & pepper, to taste

Make the dressing. In a small bowl, add the olive oil, vinegar, mustard, honey, salt, and pepper. Stir or whisk the dressing until emulsified (fully mixed and slightly thickened). Taste your dressing and season with additional salt, pepper, or honey if desired.​
Add all remaining ingredients to a large bowl. Start by adding half of the dressing, and toss to mix, adding more dressing as needed. Serve immediately or within one hour to avoid the apples discoloring and the cheese drying out.​
