Bacon Wrapped Dates Stuffed With Blue Cheese


This classic appetizer combines three intensely savory elements, each with a distinct texture and rich flavor profile. Medjool dates, known for their sweet, caramel-like flavor, are the perfect vehicle for creamy blue cheese. We’ve chosen Rogue Creamery Caveman Blue, an award-winning wheel that’s mellow and milky, with gentle fruity undertones and a hint of spice from its blue veining. This dense, milky cheese creates a surprising creamy interior for the cooked dates, which we’ve wrapped in Benton’s Smoked Bacon to bring out the smoky flavors of the cheese and add a mouthwatering savor to these bold bites.

preparation & ingredients

1 lb. Smoked bacon

1 pack Medjool Dates, 10 oz.

1/2 lb. Rogue Creamery Caveman Blue

Preheat the oven to 400 F and line a baking sheet with foil.
Remove your dates from their package and make a small slit in one side, as if you’re opening a hoagie or sub roll. You don’t want to fully slice the date in two.
Remove the pits from each date.
Take small scoops of the blue cheese, roughly a tablespoon, and stuff them into the cavity of each date.
Remove the bacon from its package and slice the strips in half, width-wise.
Wrap each date in a strip of bacon and secure with a toothpick.
Place each blue cheese-stuffed, bacon-wrapped date onto your prepared baking sheet, seam side down.
Bake for 25 minutes or until the bacon has fully cooked.
Serve warm.
