Bien Cuit means “well done,” which is an apt name for a bakery producing breads and pastries as wonderful as theirs. The brainchild of three-time James Beard Award nominee Zachary Golper, Bien Cuit is modeled after the French bakeries of yore, which used traditional grains and served as gathering places for their communities.
