This rustic Italian blue gives new meaning to beer cheese. Made by the Rosso family in the Biella region of Italy, BirbaBlu gets soaked in blonde ale and covered with malted wheat. This unique process gives the cheese its lightly fermented and fruity essence. Undertones of cooked caramel are also present in every bite. With its prevailing buttery and salty notes, it plays well with something sweet, like a smear of Trade Street Strawberry Fig Chipotle Jam.

  • The cows’ milk the Rosso family uses to produce their cheese is collected each day from 30 Biellese farms.
