First thing’s first: don’t let the name fool you. Blanc Bleu is not actually a blue cheese. It is, in fact, a goat cheese, made in France’s Loire valley. And it’s got a lot going on. You’ll notice all those lovably Loire goat’s milk qualities—clean and grassy, subtly tart—and a paste that’s compact and flinty. The texture transforms from chewy and chalky to fudgy on the finish, and there’s an extra prickle of pepper on the rind.
