When we say Swiss, do you see striking blue veins winding through an ultra-creamy paste? Probably not, but that’s what makes Bleu de Combremont such a delicious surprise. Fromagerie Combremont crafts this blue from the same high-quality milk as their AOP Gruyère. From there, bricks get coated in ash and aged in a cellar, developing minerally, mushroomy notes and a subtle piquancy. Balanced and remarkably melty on the palate. With a handful of rich, cocoa-dusted Moka Pecans, it's a perfect snack.

  • Bleu de Combremont takes the form of a brick, with a striking grey coating of ash. It has been given the nickname “cinder block blue.”
  • Fromagerie Combremont crafts this blue from the same milk as their AOP Gruyère, which must meet strict quality standards to obtain AOP status.
  • After the milk is inoculated with blue mold cultures, the cheese gets a salt brine bath before it’s transferred to a natural stone cellar for ripening.
  • Switzerland is generally known for its Alpine giants such as Gruyère, Emmentaler, and Appenzeller, but dairies are beginning to experiment more with other styles such as blue cheese.
  • At 65%, Bleu de Combremont is considered a double-crème blue cheese.
