Bright and fresh, Murray’s Burrata is a mozzarella pouch filled with sweet cream. Burrata gets its oozing, decadent interior from a combination of cream and stracciatella, or little shreds of mozzarella, that together create a cool and textured center inside a smooth, rindless ball of mild cheese. Milky and rich with a hint of lactic tang, it’s the perfect topping for salads, pasta, and pizza, especially with a drizzle of classic Italian EVOO and sundried tomatoes.

  • Stracciatella, which refers to small ripped pieces of mozzarella, was born out of cheesemakers’ desire to be less wasteful during the mozzarella making process.
  • Burrata cheese is based on traditional mozzarella. It follows the same early steps as mozzarella, including heating curds, gently stretching them and wrapping them into a ball, but with one key addition: cream.
  • When making burrata, the cheesemaker stretches the curd into a cup-like shape, then scoops cream and stracciatella into the center before tying off to enclose the pouch.
  • Burrata is a traditional product of a region of southern Italy called the Murgie in Puglia—the "heel" of the Italian boot. Burrata is said to have been first made around 1920 on the Bianchini farm.
  • In Italian tradition, burrata is wrapped in an asphodel leaf, a plant from southern Italy that is said to have the same life span as a ball of the cheese. Italians would watch the leaf to see when it wilted or browned as a way to track the freshness of the cheese.
  • While the cheesemakers that produce Murray's Burrata started cheesemaking in the United States in 1980, their family has roots in Campagna, Italy, where mozzarella has a long history. This tradition has been passed down in the family for generations.
