Rennet

There are a few different kinds of rennet, but all refer to a collection of enzymes used to coagulate milk. Animal rennet is an enzyme secreted by the lining of the fourth stomach of an unweaned calf, lamb, or kid, while “vegetarian” rennet is derived from the cardoon thistle plant and created from mold or yeast.
