A cheese’s rind is its outermost layer that forms during the aging process. Most cheeses, both hard and soft, have distinctive textured rinds that speak to how they’re formed, such as patterns or ridges. Younger cheeses have softer and more elastic rinds, while older cheeses have more firm, dry exteriors.
