A classic pasta recipe made with the best quality ingredients. When most people think of “pesto”, they’re thinking of Pesto Genovese, a sauce based in the holy trinity of basil, garlic, and salty Italian cheese. Originating from the City of Genoa, in the province of Liguria, Italy, this sauce has become a mainstay in America thanks to its punchy flavors and it’s perfect pairing with great pasta. For our recipe, we’re using the handmade, fresh Chitarrina from Un Posto Italiano, which has a fantastic flavor and texture from re-milled semola flour it's made from. Just keep an eye on it while it’s cooking -- unlike dried pasta, the fresh stuff cooks in just a matter of a few minutes. Take the pristine base of fresh pasta and add to it a vibrant pesto made with the best ingredients, like cheeses and olive oil both directly from Italy, and you have a dinner fit for even the most discerning Italian (or family member).

Ingredients
- Un Posto Italiano Chitarrina 8 oz
- 4 cups packed basil
- 1/2 cup Murray’s Italian Blend EVOO
- 1/2 cup Murray’s Select Parmigiano Reggiano,grated (1/4 LB Cut)
- 1/4 cup Murray’s Pine Nuts
- 3 tbsp Fulvi Pecorino Romano (1/4 LB Cut)
- 2 cloves garlic, finely chopped
- coarse sea salt, to taste

Directions
- Bring a large pot of salted water to boil.
- While water is boiling, blend basil, oil, pine nuts and garlic in a food processor into a smooth paste.
- Add cheeses and salt to taste and process to combine. Set pesto aside in a large bowl.
- Add pasta to the water, and cook until tender, about 3-4 minutes.
- Using tongs, transfer pasta from water directly to bowl with the pesto, bringing a little of the pasta water along with it.
- Mix to combine and divide among bowls. Top with more grated Parmigiano Reggiano and serve.
