Fresh Black Truffles

The rich umami of black truffles is a flavor worth hunting for—these winter delicacies are harvested near hazelnut trees in regions of France and Italy using special truffle-hunting dogs and pigs who sniff out their singular scent. The fancy fungi (Tuber Melanosporum) are certainly a treasure, and they’re more popular than ever; now used to add some gourmet flair to an order of fries or a plate of scrambled eggs. Rare and aromatic, truffles are a luxurious addition to any dish, whether grated onto pasta or freshly shaved for a savory garnish.
