  • This dish has all the makings of a classic love story. First, there’s the Gnocci: Italian potato dumplings, hand made with just a few, quality ingredients by the pasta maestros at Un Posto Italiano. When cooked, they puff up and become downright pillowy, melting on your tongue. Such a simple, delicious pasta deserves an equally straightforward sauce. Enter the Gorgonzola Fonduta -- similar to the Swiss Fondue, but made with little more than sweet, complex Gorgonzola Cremificato and thinned with whipping cream -- more sauce than dip. Gnocchi and gorgonzola have been paired together in Northern Italy dating back to the Roman Empire, and if that’s not love, we don’t know what is.

    1. Bring a large pot of salted water to a boil.
    2. While the water is boiling, bring cream to simmer in heavy medium saucepan over medium heat. Add Gorgonzola in pieces, whisking until melted. Keep warm on low heat.
    3. Cook gnocchi until the dumplings are tender and rise to surface, about 5 minutes. Using slotted spoon, transfer cooked gnocchi to pan with warm cream sauce and carefully combine, as the cooked gnocchi become very delicate.
    4. Sprinkle with grated Parmigiano-Reggiano, if desired, and serve immediately.
