A crisp Caesar salad is a staple of every summer cookout or backyard picnic, so we’re mixing things up with this char-grilled version of a fresh favorite. Featuring a homemade Caesar dressing and crunchy romaine, this quick and tasty appetizer is topped off with some serious cheesy flavor with the addition of Parmesan Crisps from Joyfull Bakery, a San Francisco Bay Area operation. These all natural crackers are made with 100% Parmesan cheese, making them the perfect crunchy topping for a bright, summery salad.

  1. Start by making the dressing. Add the lemon juice, garlic, anchovy fillets, mustard, egg yolk, 2 teaspoons salt, and 1 tablespoon of water to a blender and mix until smooth. Once smooth, stream in the oil to make an emulsion.
  2. With the blender off, add the grated cheese, black pepper, and lemon zest. Mix briefly. Taste for seasoning and adjust if necessary. Set aside until ready to use.
  3. Heat an outdoor grill or grill pan over high heat. Dress the halved romaine heads with the remaining oil and salt. Once the grill is hot, place the romaine on the grill, cut side down. Grill for 2-3 minutes or until grill marks appear on the lettuce.
  4. Plate up the lettuce by spooning the desired amount of dressing over the lettuce. Garnish with the parmesan crisps.
