Directions

  1. Place the frozen peas in a small pot with the butter and sweat the peas for about 3 minutes on medium heat.
  2. Add 2 cups of water and bring to a boil. Puree the peas, either by transferring to a blender or using an immersion blender, and add salt to taste.
  3. Garnish with the ham, poached eggs, olive oil, and cheese crisps.
