So many classic dishes were born from utilizing yesterday’s meal, and this ham and pea soup is no exception. If you don’t have leftovers to spare, a sliced country ham will do just the trick. So delicious that it’s almost unbelievable how easy it is to prepare.
Leftover Ham & Pea Soup

Ingredients
- 2 cups frozen English peas
- 4 oz leftover country ham, small dice
- 2 eggs, poached
- 3 tbsp butter
- 1 tsp olive oil
- 4 cheese crisps
- Salt to taste

Directions
- Place the frozen peas in a small pot with the butter and sweat the peas for about 3 minutes on medium heat.
- Add 2 cups of water and bring to a boil. Puree the peas, either by transferring to a blender or using an immersion blender, and add salt to taste.
- Garnish with the ham, poached eggs, olive oil, and cheese crisps.
