Homemade Pizza Bagels, Two Ways

Step up your pizza bagel game. Sometimes the classics are absolutely the best, like a mini bagel topped with bubbling tomato sauce, melted cheese and smoky pepperoni. These get a blitz under the broiler for that perfect golden-brown exterior. Start with these two versions, a pepperoni and a Margherita with a shower of fragrant basil on top—but feel free to think of your pizza as your own delicious blank canvas, ready for whatever cheeses and toppings bring you joy.

preparation & ingredients

8-10 mini bagels

1/4 lb. Fontina Val D’Aosta

1/2 lb. Fulvi® Pecorino Romano

1 ea. Murray's Lightly Salted Mozzarella

1 1 cup 1932 Arrabiata Sauce

1/2 cup Pickled banana peppers

1/4 cup Fresh basil

1 Vermont Smoke & Cure Pepperoni 6 oz

1 cup Otamot Organic Essential Sauce

1/2 cup Cherry tomatoes, halved

1/4 lb. Murray’s Parmigiano Reggiano

Begin by halving the mini bagels and lightly toasting under a broiler.
Shred the mozzarella and Fontina cheeses separately and set aside.
Slice the pepperoni into ¼” thick coins.
Prepare the first variation by spooning a Tbsp or so of Otamot Essential Sauce onto a mini bagel. Follow by sprinkling with shredded Murray’s Mozzarella. Add a few halved cherry tomatoes and finish with a dusting of grated Pecorino Romano.
Repeat with half of the mini bagels.
For the second variation, spoon a Tbsp or so of the 1932 Arrabiata sauce onto a mini bagel. Follow by sprinkling the shredded Fontina atop the sauce. Add a few coins of pepperoni and a few dice banana peppers and finish with a sprinkling of grated Parmigiano Reggiano.
Repeat with the remaining mini bagel halves.
Set the broiler on low or ensure that the top rack in your oven is one step down from its highest level. Place all prepared mini bagels on a foil lined baking sheet and broil for 5-7 minutes depending upon how strong your oven’s broiler is.
Chiffonade or tear the fresh basil as the pizza bagels cook.
Remove the bagels from the heat and sprinkle the torn basil over top of the “Margherita” variation pizza bagels with the cherry tomatoes. Serve hot.
