Invierno means “winter” in Spanish, so it’s no surprise that this seasonal stunner is Vermont Shepherd’s “winter cheese,” made with milk that ripens during the cold months of the year. Invierno, the twin of this Vermont operation’s summer cheese, Verano, is a firm and snackable creation made from a mix of sheep and cow’s milk. Rich and hearty, it maintains more of a woodsy, earthy profile than its fruity sibling, with a gentle spice, mild sheepy tang, and notes of sweet grass and campfire smoke. Vermont Shepherd, a 250-acre farm in the western region of the state, boasts a herd of up to 700 sheep and their own cheese cave, where their two seasonal cheeses are aged.
