The Isle of Mull is in northwest Scotland, where this mom and pop creamery is making farmstead cheese in the traditional fashion. For the Scots, that means feeding their herd with organic grass and whiskey grain, powering the dairy with only wood and water, and letting the cheese age for 17 months. No surprise, then, that this is one wonderfully rustic cheddar, with a curdy, crumbly texture and notes of umami and brown mustard.
