Isle Of Mull Cheddar
On the Isle of Mull in northwest Scotland, a mom and pop creamery makes farmstead cheese in the traditional fashion. That means feeding their herd with organic grass and fermented whiskey grain, powering the dairy with wood and water, and letting the cheese age for 17 months. This creates a wonderfully rustic cheddar with a firm, crumbly texture and notes of umami and brown mustard. With cornichons and Virginia Chutney Company Mango Chutney, it's a blissfully balanced bite.
