A cheesy sandwich with our beloved Caves cheese We love a good grilled cheese, but what we love even more? A grilled cheese with one of our most beloved cheeses, 2 Year Annelies. Annelies, one of our most iconic Cavemaster cheeses, is typically aged for up to 12 months to achieve its nutty, butterscotch-like profile. Our Caves team experimented with a 2-year aging process and came up with this sweet stunner, which is richer and sweeter than the original. Chef Laurence Edelman of the West Village’s Left Bank, a neighborhood institution of farm to table food, came up with this three cheese grilled cheese that relies on our 2 Year Annelies, Asiago Pressato, and Fontina Val D’Aosta to create one sublime sandwich.

Ingredients
- 4 Slices Rustic bread, sliced 1/2 inch thick
- 3 Tbsp. Butter
- 1/3 Cup Murray’s Cavemaster Annelies, grated
- 1/3 Cup Asiago Pressato, grated
- 1/3 Cup Fontina Val D’Aosta, grated
- 2 Tsp. Olive oil
- 1/2 Cup Ramps, chopped
- 1 Clove Garlic
- 1 Pinch Hot red pepper flakes

Directions
- Preheat oven to 400F.
- Roast the ramps with the olive oil, garlic and chili flakes until well browned. Set aside.
- Butter one side of each slice of bread, which will be the outside of the sandwich.
- Pile the cheese onto a slice of bread, and top with the cooked ramps
- In a heavy skillet, melt a large pat of butter over medium heat.
- Carefully add the sandwich and let it brown on one side for about 2 minutes. The butter should be lazily bubbling around the edges of the sandwich.
- Control the heat; don’t let the pan get too hot.
- Flip the sandwich and put the whole pan into the oven for about 3 minutes.
- Let the sandwich cool for 1 minute on a plate, and then it’s ready to serve.
