The North Sea, now in cheese form! Lighthouse Keeper is produced with milk from cows that graze just off the coast of Denmark, and carries sweet notes of cooked milk and dulce de leche. The cheese is aged in a facility outfitted with a customized ventilation system that brings in sea breeze to flavor the cheese. Through this process, it develops big, flaky crystals in the paste and a mouthful similar to fresh Marcona almonds. Pair it with some glogg to really feel like you're on the Danish shores.
