What starts as a new round of Champlain Valley Triple Cream is wrapped in three apple brandy-cured apple leaves and aged for two weeks before emerging as a velvety new concoction with a hint of boozy brandy and a whole lot of bright, mouthwatering fruitiness. The cheese’s leaves, hand-picked by our Caves team on the premises of Black Dirt Distillery in Warwick, New York, are soaked in Black Dirt’s signature Apple Jack, aged in charred American Oak barrels, imbuing the soft triple cream with a gentle smoky savor underneath its succulent apple tones.
