It’s the brainchild of Chef Dan Kluger, who has cooked in many of the city’s most celebrated restaurants, including ABC Cocina, which won the James Beard Award for Best New Restaurant when he was Executive Chef. Loring Place is an Italian-inspired New American menu of shareable plates both large and small, highlighting the produce from the farms at the Union Square Greenmarket. Loring Place is the name of the street in the Bronx that Kluger’s father grew up on, an indication that all aspects of the restaurant are rooted in the history of the city. And that includes this dish that Chef Kluger developed exclusively for Murray’s, an adult version of the kind of grilled cheese he loved as a kid.
The Loring Place Heirloom Tomato & Pancetta Grilled Cheese

Ingredients
- 8 slices sourdough or Pain au Lait Pullman bread
- 0.5 lb Consider Bardwell Pawlet, grated
- 0.5 lb English Cheddar, grated
- 8 slices La Quercia Pancetta Americano
- 2-3 Large heirloom tomatoes, sliced thin
- 4 tbsp unsalted butter, at room temperature

Directions
- Pre-heat the oven to 350 degrees. Place the sliced pancetta on a tray and bake in the oven to desired doneness. Aproximately 5-7 minutes.
- Butter the outside of each bread slice with half a tablespoon of butter. Heat a non-stick pan on medium heat and place the bread slices in the pan, butter side down.
- Add 1/4 cup of English Cheddar and Consider Bardwell Pawlet to each bread slice. Once the cheese starts to warm up and melt add a desired amount of sliced herloom tomato and cooked pancetta.
- Combine both slices of bread and grill the sandwich on medium heat until golden-brown on one side, then flip and repeat. Serve immediately.
