This hot cocktail is subtly spicy and altogether lovely. Cinnamon, cloves, and cardamon impart great spice that work beautifully with the classic combo of lemon, bourbon, and hot tea. Pair with Alpencheddar, La Noix D’Argental, Up in Smoke, and/or Shakerag Blue for a perfect winter cocktail and cheese experience (blazing fireplace optional).

  • Serves 4-6


  • For Hot Toddy:
  • 2 cups Water
  • 2 bags Winter Spice Tea such as Twining’s, or black tea
  • 1/4 cup Crown Maple Syrup
  • 3 Cinnamon sticks, divided
  • 2 Tbsp. Whole cloves, divided
  • 2 Cardamom pods
  • 2 tsp Lemon juice
  • 4 oz. Bourbon
  • 2 slices lemon, to garnish


  1. Begin by crushing the cardamom pods with the flat side of Chef’s knife. In a medium saucepan, bring the water, maple syrup, 1 cinnamon stick and 1 tbsp of cloves and 2 cardamom pods to a boil.
  2. Once it has reached a boil, turn off the heat, add the tea bags and allow the mixture to steep for 8-10 minutes.
  3. Strain the mixture and return the clarified liquid to the saucepan to briefly heat back up over a low flame.
  4. Turn off the heat and add the lemon juice. Stir to incorporate.
  5. Pour the hot mixture into mugs or double-walled glasses. Add 2 oz. bourbon to each drink and garnish with a clove-studded lemon peel and cinnamon stick.
