Traditional cheesemaking methods from Puglia have found their way to Vermont. Maplebrook Farm makes their burrata by stretching fresh curds into mozzarella and filling it with stracciatella, small shreds of mozzarella mixed with cream. That’s what creates burrata’s milky, lactic burst. It’s both cooling and rich, the smooth exterior a welcome counterpart to the oozing middle.
