Milled Curd Italian Cheese
When making some cheeses, the curd is formed into loaves and then cut, so as to receive even salting. The cutting process is referred to as milling the curd, which is generally associated with cheddar cheese. Italy has a few cheddar-like cheeses that have milled curds, including Castelmagno, Castelrosso, and Salva Cremasco.
