  1. Mix the minced anchovies, extra virgin olive oil, and sundried tomato tapenade in a small bowl to make a paste. Spread this evenly over 4 slices of the bread.
  2. Place one slice of the mozzarella on each of the 4 pieces of bread, and top with another piece of bread.
  3. Heat a large skillet over medium-high heat with the 1/4 cup olive oil.
  4. Season the breadcrumbs with the kosher salt and pour onto a medium plate, and the eggs and milk into two separate large casserole dishes
  5. Working one sandwich at a time, place each sandwich into the milk, then the eggs, then the bread crumbs. Set each sandwich onto a large plate.
  6. Once the oil has heated, pan fry the sandwiches, working in batches if necessary, until golden brown on each side and the mozzarella has completely melted. Serve immediately.
