There's something comforting about the old-school farmhouse style cheddar, especially when it comes from Vermont. Young for a cheddar, this Vermont classic is made with raw Jersey cow milk, giving it a creamy and rich consistency. Not a sharp intensity, instead this cheese has sweet apple and brown butter flavors that go down easy. A little bit crumbly and a tad toasty, it makes a great snack with ripe pairs, or is perfect to melt on top of chili. Open a crisp Riesling or bright Pilsner alongside it.

    Pair with: With something this strong it’s best to contrast the sweetness with something funky or salty: A pungent washed rind like Grayson or a punchy blue like Bleu du Bocage.
