There are some cheeses that are practically made to grate into pastas or shred over soups. Myzithra is one of those cheeses. The product of Greek sheep's milk, myzithra looks a bit like an oversized snowball and has a salty, nutty texture that operates something like a wingman: it highlights the best qualities of everything it's mixed with. As a counterpoint to its flavors, myzithra and the dishes it goes into often do well with a nice, fruity red wine.
