Stuffed with Nettle Meadow’s own Sappy Ewe, arugula, Edwards Virginia Smokehouse Surryano Ham, and fresh Black Mission Figs, this gently charred grilled cheese is a savory combo of sheepy flavor, silky ham, and rich figs. Sappy Ewe, featured here, is a delicious blend of cow and sheep’s milk that’s infused with a maple reduction and enveloped in a black pine ash rind for a wheel that’s bursting with a sweet, tangy, distinctly woodsy flavor.

    Ingredients

    Directions

    1. Heat a grill to medium high heat.
    2. Drizzle olive oil on one side of each slice of bread.
    3. Place bread oil side down on the cooler side of grill. Divide cheese evenly among slices of bread, and close the lid to the grill. Check often over the next few minutes to ensure the bread becomes toasted, slightly charred, but not burnt. The cheese should be just melted, but not running off the bread.
    4. Divide arugula on four of the slices, and close the grill lid for thirty more seconds to lightly wilt the arugula.
    5. Remove bread from grill. Lay ham over the arugula and figs over the ham. Drizzle honey and small squeeze of lemon juice over figs. Close sandwich and serve.
