No Bake Chevre Cheesecake by Vermont Creamery


This no-bake cheesecake from our friends at Vermont Creamery is the ultimate summer treat. Refreshingly cool and packed with homemade whipped cream and classic Vermont Creamery goat cheese, this chevre cake has a gentle lactic tang and traditional milky essence, making it ideal for fresh berries and a topping of crisp coconut flakes.

preparation & ingredients

1 1/2 cups Graham cracker crumbs

8 oz Champlain Valley Organic Cream Cheese

3/4 cup Powdered sugar

1/2 tsp. Orange zest, grated

Fresh berries

1 cup Heavy cream

1 Vermont Creamery Goat Log, 4 oz.

1 tsp. Vanilla extract

Coconut flakes

¼ cup Vermont Creamery Unsalted Butter, melted

Combine graham cracker crumbs and melted butter in small bowl; mix well. Press into bottom of 8-inch springform pan and set aside.
Beat heavy cream in bowl until stiff peaks form and set aside.
Beat softened cream cheese, fresh goat cheese, and orange zest in another bowl until smooth. Add powdered sugar and vanilla; beat at low speed until well mixed. Fold in half of whipped cream until incorporated. Add remaining half and fold in until smooth.
Gently spoon mixture onto pressed graham cracker crust, spreading to form an even layer. Cover with plastic food wrap and refrigerate 4-5 hours or overnight.
To serve, top with fresh berries and coconut flakes
