The inclusion of three milks—cow, goat, and sheep—distinguishes these wheels from their classic cow’s milk counterparts.   • Traditional Dutch Gouda is made only with cow’s milk, but American varieties often experiment with different milk types.
  • Each milk type offers something different to the finished cheese—tang from the goat’s milk, fattiness from the sheep’s milk, and body from the cow’s milk.
