Quality Queso
A three-cheese dip made from Murray’s best Grab the chips and dip right into this cheesy masterpiece from our Executive Chef David Elkins. Made from only the best Murray’s ingredients, this classic queso combines mozzarella, raclette, and Annelies, all melted together in one mouthwatering mix. This ultimate party centerpiece is studded with bites of Nueske’s bacon and a sweet kick of Tia Lupita’s authentic hot sauce--just provide taco fixings and let the cheese speak for itself.

Ingredients
- 5 oz. Nueske’s Bacon, minced
- 8 oz. Mozzarella, grated
- 12 oz. Spring Brook Farm Reading, grated
- 12 oz. Cavemaster Reserve Annelies, grated
- 1 1/2 tablespoons Tia Lupita Hot Sauce
- 1/2 Red Bell Pepper, diced
- 1 Small Plum Tomato, diced
- 1/2 bunch Cilantro, minced
- 3 Red Radish, Sliced
- 2 Scallions, minced
- 20 Corn Tortillas

Directions
- Preheat the oven to 350F.
- Begin by rendering the bacon in medium pan on medium heat. Once the bacon has browned, remove from the pan, reserving the fat, and place on a paper-towel lined plate.
- Mix the mozzarella, Reading, and Annelies together with the hot sauce. Place the cheese into an ovenproof dish (you will be using the same dish to serve in) and place into the oven. Bake until the cheese is just bubbling, about 20 minutes.
- While the cheese bakes, prepare the pepper, tomato, cilantro, radish, and scallions for the garnish.
- To heat the tortillas, heat a teaspoon of the bacon fat in the same small pan over medium-high heat. Place as many tortillas as possible into the pan and cook until soft, about 1 minute per side. Keep tortillas warm by wrapping in tin foil.
- Serve the queso fundido with all of the garnishes on top and the tortillas on the side for dipping
