Queen of Quality is not just an indication of this cheese's rich, royal flavor. A designation is awarded to the select few Jersey cow dairy farms in the United States. Grafton is sourcing the milk for this limited cheddar from the grass-fed Jersey cow herd from Spring Brook Farm in Reading, Vermont. Wrapped in cloth and aged for at least six months in their caves in Grafton, the Queen of Quality cheddar maintains a high cream count. The sweet, buttery notes are unique to this clothbound, balancing out the earthier notes that evoke its cave development, as well as notes of aging in its tropical fruit flavors. Its crumbly texture melts well, especially on a nutty wholegrain bread, or over some fresh fruit.

    A smooth and medium-bodied wine with a more rounded flavor than other reds. Dark fruits are present but with minimal tannins and no noticeable spice.

    Pair with: Earthy tommes like Toma Walser, mellow Fontina, or a lightly aged goat cheese like Leonora.
