  • From a sprawling family estate in Devon, England, Quicke’s grass-based farming is the foundation of its cheese production.
  • The cheese is crafted from the pasteurized milk of grass-fed Friesian-Ayrshire cows, after which local sea salt harvested from the coast of Cornwall is added to the mix.
  • Aged for 12 months in Quicke’s cheese caves, the farmstead cheddar has a discernable cellar-like aroma with savory, horseradish notes toward its clothbound rind.
  • Murray’s selects wheels based on their tangy, grassy aroma, complete with flavors of sour cream and sweet onion, making it the perfect cheddar for burgers and sandwiches.
When you receive your cheese, unpack the order and refrigerate the items. We recommend using the cheese paper we send most of our products in to store the cheese. The cheese paper helps cover the items and stop them from drying out, while also allowing the cheese to breathe. Since cheese is mold, it's a living thing! If you cut off air circulation to the cheese, you can actually cause it to suffocate and spoil at a faster rate.

  • The farmland can be traced back to a deed granted by King Henry VIII.  
  • After Henry VIII broke from the Catholic church, he dissolved the monasteries and reallocated this stretch of land to a man named Thomas Bidwell.  
  • Bidwell’s daughter married into the Quicke family, and for 14 generations, the Quickes have tilled these 1000 acres of grassland, including 250 acres of permanent pasture.  
  • Today, Quicke’s is led by Mary Quicke, an outspoken leader in the cheese world who is known for her sharp cheddars, an even sharper wit, and her penchant for surfing in the Atlantic.
  • Decades ago, Mary’s father planted a secret grove of towering redwood trees on the farm.  They are perhaps the only grove of redwoods in all of Devon.
